Weekend Round-Up

This past week has been a busy one for us. Not much time to craft or cook because we’ve been getting new floors!

The installation process has been a tad long, so any fun projects have been put on hold. But we are anxiously awaiting the end result, along with some new furniture items to polish off the space. Once we have all that together (which should probably be in the next week or two), I’ll definitely share it on here.

I did work on some ideas for throw pillows this weekend. Finding ways to re-purpose those wedding napkins is definitely a good thing!

On Sunday night, we settled in to watch some Olympic swimming and gymnastics. I found a Lo Mein recipe in my Real Simple cookbook (that recipe was with shrimp, but I had chicken on hand, which was a great replacement), and thought I would make that for dinner. I’m always apprehensive about how Asian dishes turn out when I cook them (as opposed to leaving it to the professionals!), but this one was actually pretty tasty.

 


Chicken Lo Mein, c/o Real Simple

Ingredients

10 oz Lo Mein Noodles (can be found in the Asian aisle of most major super markets)

3/4 lb of baked chicken breast, diced into bite-sized pieces

6 oz Super snap peas – trimmed

5 green onions, sliced, green and whites portions separated

2 cloves of garlic

2 TBSP oil

1/4 C oyster sauce

1 TBSP soy sauce

2 TBSP rice vinegar

1/4 C water

Red pepper flakes, for garnish

Preparation

Cook noodles according to instructions on packaging.

In a large pan, heat oil over med-high heat. Add garlic, peas, white parts of the onion and cook for 2-3 minutes. Add chicken, oyster sauce, soy sauce, rice vinegar and water. Heat for about 4 minutes, until sauce is a bit thickened.

Add noodles to pan. Toss until coated. Serve sprinkled with red pepper flakes and the green parts of the onion.
